TOMATO GNOCCHI W LEEK & PINE NUTS




GNOCCHI



Serves 3 - 4

INGREDIENTS

• 4 – 5 Medium sized potatoes

• 1/2 Tsp salt

• 2 Tbsp olive oil

• Approx. 1 Cup plain flour




METHOD

1. Leaving the skin on the potatoes place in a large pan of water and boil for around 30 minutes until a knife can easily puncture through the potatoes


2. Drain the potatoes, leave to dry and gently cool before scooping out the inside into a large mixing bowl


3. Add olive oil and salt and mash until smooth


4. Bring a pan of salted water to the boil and place on the pan lid


5. Add the flour, bit by bit, to the mixing bowl until the potatoes begin to turn into a dough (Just enough dough like consistency to enable you to pick a section of the potato up to form a slim roll/rope)


6. Once the rope has been formed cut into 1 inch pieces and place on a floured plate ready for cooking (Repeat steps 5 and 6 until all the potato dough has been used)


7. When the water is ready and boiling add the gnocchi in small batches for around three minutes each


8. Allow each batch to rise to the top of the boiling water - this means the gnocchi is cooked


9. Remove the batches, once cooked, with a small sieve, place into a bowl and drizzle with a little olive oil and ground sea salt






VEGAN LEEK & TOMATO SAUCE



• 2 Cups leek (chopped)

• 2 Cups fresh tomatoes (diced)

• 1/4 Cup white onion (diced)

• 1 Tsp tomato puree

• 1 Tbsp maple Syrup

• 2 Tbsp pine nuts

• 1 Tbsp coconut oil

• Generous pinch Sea salt






METHOD


1. Add coconut oil to Wok and heat. Add salt, pine nuts, onion & chopped leeks to the pan and cook


2. Add maple syrup and cook until all vegetables are coated and caramelised

3. Add tomato puree and stir


4. Add fresh chopped tomatoes and simmer for 3 - 7 minutes or until the sauce has thickened


5. Add tomato and leeks to place and place fresh gnocchi on top. Add optional toppings if desired and drizzle a little olive oil and crushed black pepper to finish.







OPT. TOPPINGS

• 1 Ripe avocado (sliced)

• 1 Tbsp fresh dill

• 2 Tbsp raw pine nuts

• Drizzle olive oil
